Work backwards, not forwards
Most people decide when to leave by guessing. The reliable method is to start at the boarding gate and subtract.
Boarding closes 20 to 30 minutes before departure. Getting from security to a gate at Bristol takes 10 to 15 minutes at a walk. Security itself is 10 minutes on a quiet morning and 45 on a bad one. Bag drop closes 40 to 60 minutes before departure depending on the airline, and the queue for it can be another 30. Then add the drive.
Do that sum and the standard advices — two hours for a short-haul flight, three for long-haul, from the terminal door — turn out to be about right, with the important caveat that they are measured from arriving at the terminal, not from leaving home.
Real driving times to Bristol Airport
From Bristol city centre it is 8 miles and 25 minutes off-peak, 35 to 45 minutes in traffic. The A38 is the only realistic approach and it does get busy.
From Bath, about 20 miles and 45 minutes. From Cardiff or Newport, an hour to an hour and a quarter. From Gloucester or Cheltenham, an hour to an hour and a quarter. From Exeter, an hour and twenty. From Swindon, an hour and a half.
Those are clear-run figures. Between seven and nine in the morning, add a third.
The two hours that catch people out
There are two specific traps at Bristol. The first is the 06:00 to 07:00 departure wave: a very large number of flights leave inside that hour, so security at 04:30 is at its worst all day. Build in the extra half hour rather than hoping.
The second is the school holidays, and particularly the first Saturday of one. Bag drop queues on those mornings can run considerably longer than the airline's own guidance, and no amount of walking quickly afterwards recovers it.
A worked example
A 06:25 departure to Malaga in half term, flying from central Bristol with hold luggage.
Boarding closes 06:00. Be through security by 05:40. Security in the peak: allow 40 minutes, so join it at 05:00. Bag drop before that: allow 30 minutes of queue, so be at the desk at 04:30. Drive 25 minutes plus a margin: leave at 03:50.
That is a 03:45 pick-up for a 06:25 flight, and it is not excessive — it is what the sum produces. Most of the people who miss flights left at half past four because two hours felt like a lot.
If you are being collected on the way back
Do the opposite: do not specify a time at all. Give your driver the flight number and let them watch the arrival. Landing is only the start — passport control and baggage reclaim at Bristol can add 20 to 45 minutes, and on a bad night more.

The simple version
Terminal two hours before a short-haul flight, three before long-haul, and add half an hour for the 06:00 wave or a holiday weekend. Then add your real drive time, not your optimistic one. Then book the car for that time — and if you are landing rather than leaving, give the driver the flight number and stop thinking about it.
